Dahibara Aloodum Recipe (Odia Style)

Dahibara Aloodum is an iconic street food from Cuttack, Odisha. It’s a delicious combination of soft dahi vadas soaked in seasoned curd, spicy aloo dum, and ghuguni (white peas curry), topped with chutneys, sev, and onions.


Ingredients:

For Dahibara:

  • Urad dal (Black gram) – 1 cup (soaked 4-5 hours)
  • Salt – to taste
  • Water – as needed
  • Oil – for deep frying

For Soaking Water:

  • Curd – 1 cup (slightly sour)
  • Water – 3 cups
  • Salt – to taste
  • Roasted cumin powder – 1 tsp
  • Black salt – ½ tsp
  • Curry leaves – few
  • Mustard seeds – 1 tsp
  • Dry red chilli – 1
  • Oil – 1 tsp (for tempering)

For Aloodum:

  • Potatoes – 3-4 (boiled & cubed)
  • Onion – 1 (chopped)
  • Ginger-garlic paste – 1 tsp
  • Tomato – 1 (chopped)
  • Red chilli powder – 1 tsp
  • Turmeric powder – ½ tsp
  • Cumin powder – 1 tsp
  • Garam masala – ½ tsp
  • Salt – to taste
  • Oil – 2 tbsp
  • Coriander leaves – for garnish

For Ghuguni:

  • White peas – 1 cup (soaked overnight)
  • Onion – 1 (chopped)
  • Ginger-garlic paste – 1 tsp
  • Tomato – 1 (chopped)
  • Turmeric – ½ tsp
  • Cumin powder – 1 tsp
  • Red chilli powder – ½ tsp
  • Salt – to taste
  • Oil – 1 tbsp

Toppings:

  • Tamarind chutney – as needed
  • Green chutney – as needed
  • Sev – for garnish
  • Chopped onions – for garnish
  • Coriander leaves – chopped
  • Roasted cumin and chilli powder mix – a pinch

Preparation Steps:

1. Make Dahibaras:

  • Grind soaked urad dal into a smooth batter. Add salt and whisk to make it fluffy.
  • Heat oil and deep-fry small portions of batter until golden brown.
  • Soak the vadas in warm water for 15 mins, then transfer to the seasoned curd water.

2. Prepare Seasoned Curd Water:

  • Mix curd, water, salt, black salt, and roasted cumin powder.
  • Heat 1 tsp oil, splutter mustard seeds, dry red chilli, curry leaves, and mix into the curd water.

3. Make Aloodum:

  • Heat oil, sauté onion, add ginger-garlic paste, and cook till golden.
  • Add chopped tomato, turmeric, chilli, cumin powder, and salt. Cook till mushy.
  • Add boiled potatoes, mix well, simmer for 5-7 minutes. Finish with garam masala and coriander.

4. Prepare Ghuguni:

  • Pressure cook soaked white peas till soft.
  • In a pan, sauté onion, add ginger-garlic paste, tomato, and spices.
  • Add boiled peas and little water. Simmer till thick.

5. Assemble:

  • In a bowl, place 2–3 dahibaras with curd.
  • Top with a scoop of aloodum, some ghuguni.
  • Add tamarind & green chutneys, chopped onion, sev, coriander leaves.
  • Sprinkle roasted cumin-chilli powder.

Step-by-Step Preparation:

1. Make the Puris:

  • Mix semolina, all-purpose flour, and salt. Add water little by little and knead to a stiff dough. Cover and rest for 30 minutes.
  • Roll out the dough thinly and cut small circles (about 1.5 inches diameter) using a cookie cutter or bottle cap.
  • Heat oil in a deep pan and fry the puris on medium heat until they puff up and turn golden brown. Drain on paper towels.

2. Prepare the Spicy Tamarind Water (Pani):
